An island is the one piece of a kitchen that sits away from every existing wall — which means away from the plumbing, electrical, and structural support that perimeter cabinetry can rely on already being nearby. Adding or upgrading an island, whether as its own project or part of a larger remodel, involves a different set of technical decisions than any other part of the kitchen.
That’s especially true in South Florida, where most homes are built on a concrete slab foundation rather than a raised wood subfloor. Running new plumbing or electrical to an island in the middle of the room means working with or through that slab, not simply routing lines underneath it the way a home with a crawlspace would.

Electrical code requirements.
The National Electrical Code requires at least one receptacle outlet for any island countertop space with a long dimension of 2 feet or more and a short dimension of 1 foot or more, and every one of those countertop receptacles must have GFCI protection. Outlets can’t be placed below the countertop surface — code requires them on the countertop itself (pop-up or flush-mount), mounted no more than 20 inches above the work surface, or built into a listed in-countertop assembly.

Plumbing an island sink.
Adding a prep or bar sink to an island is straightforward in concept but genuinely more involved in a slab-on-grade home like most in South Florida, since there’s no crawlspace to route a drain line beneath the floor. The options are trenching and repouring a section of the slab to run a proper gravity drain before flooring goes down — the cleaner long-term solution, best planned during a broader remodel — or installing an above-slab macerating or lift pump system when slab work isn’t feasible mid-project. Either way, this decision needs to be made early, before flooring is finalized.

Structural support for stone tops.
Stone countertop overhangs — common on islands for seating or a waterfall edge — start needing structural support once they extend much beyond about 10 to 12 inches unsupported, since an unsupported overhang concentrates stress right at the cabinet edge and risks cracking, especially under the weight of someone leaning on it. Corbels, steel flat-bar or angle brackets under the overhang, and reinforced plywood substrate all address this, and heavier islands — large slabs or full waterfall panels wrapping to the floor — sometimes need a reinforced base structure or steel sub-frame rather than standard cabinet construction alone.

Ventilation when the cooktop moves to the island.
If a range or cooktop relocates from the wall to the island, there’s no wall left to mount a standard range hood on. That leaves two real options: a ceiling-hung island hood, which requires structural blocking above the island and ductwork routed through the attic to the exterior, or a downdraft ventilation system built into the cooktop itself, which vents through the base cabinetry and routes out through the slab or to an exterior wall. Both require planning before the island’s rough-in, not after.

Kitchen Island Installation Questions, Answered
1 Do I need an electrician just to add an island with outlets?
Yes — island receptacles have to be GFCI-protected and correctly placed per code (on the countertop, within 20 inches above it, or in a listed in-counter assembly, never below the counter), which requires a licensed electrician and a permitted circuit.
2 Can you add a sink to my island if my kitchen is on a concrete slab?
Yes, but it takes more planning than in a home with a crawlspace. We either trench and repour a section of the slab to run a proper gravity drain, or install an above-slab pump system if slab work isn't practical for your project — that decision needs to happen early, before flooring goes down.
3 How big can a waterfall countertop overhang be before it needs support?
Once an overhang extends much past 10 to 12 inches without support underneath, it's at real risk of stress cracking, especially with everyday leaning or bumping. We add corbels or steel bracket support under any overhang beyond that range.
4 I want a cooktop on my island — where does the vent hood go without a wall?
Either a ceiling-mounted hood with ductwork routed through the attic to the exterior, or a downdraft system built into the cooktop that vents down through the cabinetry and out through the slab or a nearby exterior wall. Both need to be planned before the island's rough-in.
5 Will adding an island require breaking up my floor?
Only if you're adding plumbing (a sink or dishwasher) and slab trenching is the chosen route. An island with just electrical and no plumbing typically doesn't require breaking into the slab.
6 How long does it take to add an island to an existing kitchen?
A straightforward island with electrical only can often be completed in about a week. Add plumbing with slab work, or a full ventilation solution for a relocated cooktop, and the timeline extends to two to three weeks or more depending on permitting.
7 Can an island be freestanding (movable) instead of built-in?
Yes, though freestanding islands generally can't have hardwired electrical, plumbing, or ventilation run to them the way a built-in island can — they work best as pure workspace/storage additions rather than islands with a sink or cooktop.
8 Does my island need its own electrical circuit?
Countertop receptacles on the island need to be on a GFCI-protected circuit per code, and depending on what else is on the island (a beverage center, warming drawer, or cooktop), a dedicated circuit is often required for that specific appliance as well.
